Most restaurants comply with a photocopied sheet nobody can find. There is a better way \u2014 but first, what the law actually says.<\/p>\n<h2>The 14 you must declare<\/h2>\n<p>Gluten-containing cereals, crustaceans, eggs, fish, peanuts, soybeans, milk, tree nuts, celery, mustard, sesame, sulphites, lupin, and molluscs. The declaration must be available to the guest without asking the kitchen to guess.<\/p>\n<h2>Where paper compliance breaks<\/h2>\n<p>The sheet is printed, the menu changes, the sheet is not reprinted. A guest with a nut allergy asks a Saturday-shift waiter, who asks a busy kitchen, who answers from memory. That chain is exactly what the regulation exists to prevent \u2014 and it&#8217;s also a real safety risk to a real person.<\/p>\n<h2>What &#8220;automated&#8221; looks like<\/h2>\n<p>On a digital menu, allergens live with the dish, not in a parallel document. Change the recipe, and the labels update everywhere at once. Guests filter the menu by their own allergy, in their own language \u2014 no interrogation of staff required.
